About the Company

Clear Springs Food was founded by Jess O. (Ted) Eastman in 1966. At that time, Ted’s goal was to raise 400,000 lbs of rainbow trout and sell them to 1000 Springs Trout Farms (his previous employer). They decided not to buy his fish, so he built a small processing operation instead. But the tables turned, and in 1981 Clear Springs Trout Company purchased 1000 Springs Trout Farms. The company name was changed to Clear Springs Foods, Inc. in 1991.

Clear Springs Foods calls Snake River Canyon of southern Idaho’s Magic Valley home. Here, their rainbow trout is farm-raised in concrete raceways fed by an abundance of crystal clear spring water. Ideal growing conditions, combined with a commitment to quality and innovation, have made Clear Springs the world’s largest producer of rainbow trout, processing over 25 million pounds a year.

At the Soda Springs brood station, Clear Springs is capable of producing more than 80 million rainbow trout eggs a year. This facility also includes a brood stock selection program to select the best trout families. A patented, automated feed system distributes feed to the fish throughout the day. Production farms are continually monitored and inventoried to provide highly accurate production forecasts. In addition, they have partnered with farms in Chile at which trout are raised following the exact same high standards used at their Idaho farms.

Dressed Trout – Dressed Rainbow Trout is the whole fish, with the gills and viscera (internal organs) removed. The backbone and rib cage remain intact. This style is also available with the head removed.

Boned Trout – Boned Rainbow Trout is first eviscerated and then the backbone, rib cage and anal fin are also removed. Note the term “Boned” does not mean completely boneless.

Boned Head Removed Trout – Boned Rainbow Trout is also offered with the head, pectoral fins and collar bone removed for added convenience. Note the term “Boned Head Removed” does not mean completely boneless.

Pin Bone Out Trout – PBO Boned is similar to Boned but the additional step has been taken to remove the pesky little pin bones. Note the term “PBO Boned” does not mean completely boneless.
